ROBYN COOK CHRISTMAS RECIPE
No matter where you are right now in this beautiful country it's hot. If you're up north then it's likely to be hot and wet and down south it's hot and... well sometimes I feel a little guilty living in a high rain-fall area. The best aspect of this season is the magnificent fruits available all around the country. Mangoes, lychees, papaya, bananas, cherries, plums and apricots just to name a few. We are very lucky to have so much variety and exquisite quality. We should be proud of our farming community for delivering such nourishing foods.
This month's recipe uses good Australian bananas and is perfect for a Christmas day breakfast.
Coconut Pancakes with Banana and Orange Sauce
For plain pancakes, use one cup of milk and omit the coconut milk and desiccated coconut.
1 cup self-raising flour (or plain flour with bi-carb)
1 egg
1/2 cup coconut milk
3/4 cup milk
1 tablespoon desiccated coconut
butter
Mix all ingredients together until smooth and creamy. Let sit for half an hour. Mix again and add more milk if the batter is too thick. Melt a little butter in a heated frypan or hotplate and pour on a large spoonful of batter. Cook on a moderate heat until bubbles form then turn and cook the other side. Remove and continue to cook pancakes until all mixture is used. Serve with Banana and Orange Sauce.
Banana and Orange Sauce
4 Cavendish bananas
juice of 2 oranges
2 teaspoons raw sugar
1 teaspoon butter
Slice bananas into rounds. In a small saucepan gently simmer the bananas, butter, juice and sugar until the sauce is creamy and the bananas are soft but still hold their shape.
